After one semester as a science major at a university, Karli Franske knew she had made a mistake.
“I was creative, but I didn’t want to be an artist,” she recalled. “My grandmother and mother baked a lot and I loved to cook.”
So Karli enrolled in Fox Valley Technical College’s Culinary Arts program. She appreciated the variety of equipment and helpful instructors.
“It was hands-on and more to the point. The general classes tied into my culinary degree,” she explained. Her first rotation was baking and the light bulb went on.
“I knew this is what I have to do,” Karli declared.
She added the Hotel and Restaurant Management degree and a Baking certificate at FVTC, then spent six months at the French Pastry School in Chicago. A FVTC instructor helped Karli get her first bakery job in Milwaukee.
“I always thought I would start my own business if the opportunity presented itself,” she said. When she and husband, Tyler, moved back home to Green Bay, the time was right. Karli opened Cake and Cookie in February of 2013. The business offers party and wedding cakes, specialty cookies and French macarons.
Her advice: “Make sure you are passionate about culinary arts. It takes a lot of work. Try it out. You won’t really know what it is like until you actually work in a commercial kitchen.”
